I’m allllll about convenience ladies. I want the easiest meals possible most of the time that keeps me healthy. I also want to make sure Penelope and Philomena are putting healthy things in their body.
How do you find convenience, without heading for the BK chicken nuggets?
I realized every time I needed convenience (which is a lot!) I was eating shitty food. Chicken nuggets, handfuls of chocolate and gorging on chips seriously can’t be the answer every time.
When did good food become so complicated?
So one day I’m slugging around because I’m just feeling crappy, eating crappy, getting no exercise. I’m so hormonally imbalanced I’m a perpetual yoga pants wearing, birds nest hair having, one eye smaller then the other having crazy woman towards Penelope and Philomena. Thank god for children’s unconditional love!
So I’m getting sucked into the vortex that is Youtube, and I became inspired by healthy girls on there. I found little snippets of easy recipes from girls on IG. And a lightbulb popped up. It doesn’t have to be hard to be good. It doesn’t have to be hard to be healthy.
Leave the hard stuff for when there’s energy.
The end result?
EASY. Like you need a toaster and a blender easy.

It’s so nice. When you feel like you’re not running haggard and you’re still delivering things that are a priority to you. It’s NICE! For me, being healthy is a huge priority for our family so finding easy ways to do that is GOLLLDEEEN.
